Pasticciotto Lecesse Class- Puglian Custard Short Crust Tart

Lecce’s pasticciotto has its origins in 1745 in Galatina. It was precisely here that Nicola Ascalone, whose pastry shop was in critical conditions, created a "mess" (“pasticcio” inItalian) to consume residual and insufficient dough and custard to make a classic tart.

Then, he offered what he had just made as a gift to someone passing by who, delighted by the dessert, celebrated its goodness. From that day, the "pasticciotto" became the classic Lecce’s dessert, to taste strictly hot.

Knife Skills Class

Knife Skills

Nervous about knives?  Don’t be! Knives are the ultimate tool in the kitchen.  In this hands-on course, learn the proper techniques to create delicious foods while having fun.  You will see how knife techniques and recipes work together and understand the importance of proper knife skills and safety. 

Details

●     Classes are 3 hours in length, unless otherwise noted.

●     A Chef’s Knife, Paring Knife, Honing Steel and Sharpening stone will be provided for use in class.

●     An apron will be provided for use in class (aprons are available for purchase).

●     You will be standing, cooking and working for most of the class.

●     You will enjoy making a stir fry of your meats and vegetables that you have chopped.

●     You will take home a folder with recipes, diagrams, and serving suggestions.

●     You will take home a container of additional ingredients from your chopping experience.

●     Please wear comfortable, closed-toe shoes and have long hair tied back.

●     Please limit jewelry on hands and wrists (limit multiple rings and bangles).

●     Students under the age of 14 must be accompanied by a paying adult.

Please note we do use nuts and nut products in some food items.
